Squash and peach salad


Type of cooking: electric cooker, gas hob

Preparation time: 15 minutes
Cooking time: 10 minutes

Ingredients (4 people):

     1 zucchini
     1 can of peaches in syrup or 3 peaches
     2 chicken breasts
     ½ red onion
     2 handfuls of arugula
     1 red endive
     Salt, pepper
     1 tablespoon olive oil

     salsa:
     2 c. tablespoon balsamic vinegar
     5 c. tablespoon walnut oil
     Salt and pepper

Prepare the sauce by mixing all ingredients.

Cut chicken breasts into cubes. Putting heat the olive oil in a frying pan and fry the breasts for 10 minutes turning occasionally. Add salt and pepper and let cool on a plate.

Peel the onion and cut into thin slices.

Wash and dry the zucchini, and cut into thin slices.

Drain the peaches and cut each half into 6 / 4.

Wash and drain the arugula.

Cut the red endive.

Pour all ingredients into a bowl, add the chicken and drizzle the sauce. Mix and serve.
